Banana Bread Recipe

Serves 8

INGREDIENTS:

  • 1 cup Wholemeal Flour
  • 240g Cavendish Banana
  • 1/4 cup Rice Malt Syrup
  • 4 Medium Eggs
  • 1/4 cup Coconut Oil
  • 1/4 tsp Himalayan Salt
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Powder
  • 1/2 cup Low Fat Plain Yoghurt

 

METHOD:
1. Preheat the oven to 160°C fan-forced.
2. Line a loaf tin with baking paper.
3. Using a blender, combine the bananas, syrup, melted coconut oil, vanilla and eggs.
4. Combine the flour, baking powder, cinnamon and salt together in
a separate bowl.
5. Mix the wet and dry ingredients together, being careful not to
over beat.
6. Pour the mixture into the loaf tin and place in the oven for 60-70
minutes, or until cooked through.
7. Allow banana bread to cool before serving.
